The list view is only available in one column to my knowledge. When configuring the itempane, under the first section where it asks about the display in card view or list view, select card view and set the columns beneath. If you do this I would also set it that way in the menu module and restrict to only card view if your display depends on it that way. Otherwise the customer could override the itempane setting by selecting list view in the menu.
